This quick recipe for barbecued prawns is perfect for a light dinner or entrée. For a fuller flavour coat the prawns in seasoning a few hours before cooking.

Ingredients
24 large raw prawns, peeled and deveined, tails intact
1 tablespoon olive oil, for cooking
Mustard dipping sauce
21⁄2 tablespoons Dijon mustard
11⁄2 tablespoons lemon juice
1⁄2 teaspoon ground coriander
1⁄2 teaspoon ground cumin
1⁄4 teaspoon freshly ground black pepper
Spicy seasoning
11⁄2 teaspoons ground coriander
11⁄2 teaspoons ground cumin
1⁄4 teaspoon freshly ground black pepper
Step 1.
Make the dipping sauce by combining the mustard, lemon juice, coriander, cumin and pepper.
Step 2.
Make the seasoning by combining the spices in a large bowl. Add the prawns, tossing to coat.
Step 3.
Lightly oil a barbecue hotplate and preheat to high. Thread the prawns onto eight metal skewers, or use wooden skewers, soaking them in cold water for 30 minutes before use.
Step 4.
Cook the skewers over direct heat for 2-3 minutes on each side or until cooked through.
Step 5.
Remove the prawns from the skewers and serve at room temperature with the mustard dipping sauce. Or allow the prawns to cool, then put in the fridge and serve them chilled.
