Tuna And Cherry Tomato Kebabs

Fresh tuna is a delicious and versatile ingredient that is easy to cook on the barbie. This recipe is healthy and tasty and would make for a great entree or starter dish. You can turn this dish into a main meal by serving it with steamed rice and green beans.

This recipe serves 4 and takes 16 minutes to make, excluding time spent marinating.

Tuna and Tomato Kebabs

Preparation time 10 mins + 30 mins marinating

Ingredients

1 tablespoon chopped rosemary
1 clove garlic, crushed
2 tablespoons olive oil
4 tuna steaks
1 small lemon, cut into 16 thin wedges
16 cherry tomatoes

Step 1.

Combine the rosemary with the garlic and oil in a non-metallic shallow dish.

Step 2.

Cut each tuna steak into eight chunks, then add to the rosemary marinade, turning to coat. Chill in the fridge for 30 minutes.

Step 3.

Preheat a barbecue hotplate or grill rack to medium-high. Thread the tuna chunks, lemon wedges and tomatoes onto eight metal skewers, or use wooden skewers, soaking them in cold water for 30 minutes before use.

Step 4.

Cook the kebabs on the hotplate or grill rack over direct heat, turning occasionally, for about 6 minutes or until cooked to your liking.
