Cooking a steak to perfection is an essential skill that any barbecue enthusiast should know, as it’s one of the most popular barbecue meals and is absolutely delicious when done right.
In this how-to video from Matador, barbecue guru and chef Ben Farley, founder of BBQ School, demonstrates how to cook the perfect steak on the barbecue.
The first step is to select the cut of meat. Ben is using a scotch fillet, as it’s ideal for cooking on a barbecue thanks to the fat content that results in a nice, moist steak.
The next step is to oil and season the steak. It only needs a small amount of oil to prevent it from sticking. Season with sea salt and cracked pepper over the top.
Before cooking the steak, make sure the barbecue is preheated to seal the steak perfectly.
Lay the steaks on the surface of the barbecue and leave them to cook for two minutes. Rotate the steaks by 90 degrees after about two minutes, leaving the raw side facing upwards.
Once moisture forms on top, it’s time to turn the steaks. Leave the steaks cooking on this side for about half the cooking time of the first side.
When the steaks are finished cooking, next step is to rest them for about five minutes. This is one of the most critical elements of cooking a steak, as it enables the steak to relax and tenderise. Place the steaks on the top level to stay warm while they rest.
Once the steaks have rested, it’s time to tuck in and enjoy!
